Keeping buttercream cake fresh overnight

Fridge or counter? Box or wrap? Simple ways to keep your cake tasting freshly baked for the party tomorrow.

Picked your cake up a day early? Good planning. Here is how to keep it perfect.

Keep it cool

Buttercream cakes belong in the fridge overnight, in their box. The box stops the sponge from picking up other flavors.

Bring it back to room temperature

Take the cake out 30 to 60 minutes before serving. Cold buttercream tastes flat; slightly softened buttercream tastes like it should.

Cutting clean slices

  • Use a long, sharp knife
  • Dip it in hot water and wipe between cuts
  • Cut from the center outwards on larger cakes
